Easy Roast Chicken & Bacon Traybake

Easy All-In-One bake, when you're craving a speedier roast dinner! Juicy chicken breasts wrapped in Finnebrogue Naked Smoked Streaky Bacon, filled with a garlicky cream cheese centre and roasted until golden. Finnebrogue Smoked Streaky Bacon, made without nitrites, add an extra oomph of flavour, whilst keeping the chicken tender and juicy. If you can't get the streaky bacon it's also delicious with their smoked back bacon. Everything cooks together on one tray with baby potatoes tossed in fragrant Italian seasoning, with hints of thyme and sage, plus vegetables that soak up all those rich, savoury flavours. It’s an effortless roast with a hint of indulgence, that’s perfect for when you want an easy weekend or weeknight dinner.

Ingredients

  • carrot 2 (sliced)
  • baby potatoes 1000 g (chopped)
  • Italian seasoning 2 tsp
  • chicken breast 4
  • garlic cloves 2 (crushed)
  • cream cheese 100 g
  • Finnebrogue naked smoked streaky bacon 200 g
  • green beans 200 g
  • white wine vinegar 1 tbsp
  • honey 1 tsp

Method

Cook the baby potatoes & carrots

  • Preheat the oven to 220C/200C fan.
  • Slice the carrots diagonally (no need to peel - just give them a good scrub).
  • Quarter the baby potatoes, then add them with the carrots to a large baking dish. Drizzle with your preferred oil, sprinkle over most of the Italian seasoning (reserve a teaspoon for the chicken parcels), and season with salt and pepper.
  • Toss well to ensure they are coated then bake in the oven for 15 minutes.

Prep the chicken & bacon parcels

  • Crush the garlic cloves, then mix with the cream cheese and reserved Italian seasoning.
  • Cut a little slit in the centre of each chicken breast and stuff with the garlicky cream cheese. Fold the chicken breast back on itself then wrap in 2 - 3 rashers Finnebrogue Naked Smoked Streaky Bacon. Repeat until all are assembled.

Add the chicken & green beans

  • Remove the dish from the oven and scatter over the green beans and sprinkle over the white wine vinegar.
  • Pop the chicken parcels on top. Mix the honey with a dash of oil and brush over the bacon. Turn the oven down to 200C/180C fan. Bake in the oven for another 25 - 30 minutes, until the chicken is cooked through.
  • Plate up and enjoy! Making sure to pour over all the delicious cooking juices from the dish.
