Easy 3 Bean Salad

A quick and easy Three Bean Salad that is nutritious and delicious, plus it's super speedy to make. Any leftovers are ideal for lunch the next day. You can make this vegan by subbing honey with maple syrup.

Ingredients

  • black beans 400 g (drained)
  • cannellini beans 400 g (drained)
  • red kidney beans 400 g (drained)
  • celery 2 (diced)
  • bell pepper 1 (diced)
  • carrot 1 (diced)
  • cucumber ½ (diced)
  • fresh coriander 1 handful (chopped)
  • olive oil 5 tbsp
  • cider vinegar 5 tbsp
  • honey 1 tbsp

Method

Prep the ingredients

  • Drain the beans, place into a large mixing bowl.
  • Dice the celery, bell pepper, carrot, cucumber and chop the coriander and add to the bowl.

Add the dressing ingredients

  • Add the olive oil, cider vinegar and honey. Season to taste with salt and mix well to combine.
  • Plate up enjoy!
