Curried Mackerel Taco

Food doesn’t have to be complicated to be delicious, this mackerel taco is so simple but loads up tonnes of flavour and can come together in minutes. Precooked mackerel is a great shortcut to a quick dinner or lunch. Use your favourite spice to add the flavour and mix up the fresh vegetables.

Ingredients

  • onion 1 (sliced)
  • cucumber ½ (sliced)
  • vinegar 2 tbsp
  • sugar pinch
  • smoked mackerel fillets 400 g (flaked)
  • mayonnaise 4 tbsp
  • curry powder 2 tbsp
  • taco shells 12

Method

Make the quick pickle

  • Peel and slice the onion. Slice the cucumber.
  • In a small bowl mix the onion and cucumber with the vinegar and sprinkle of sugar. Use your fingers to massage the vinegar in. Set aside to pickle.

Prep the mackerel

  • Flake the mackerel into big chunks and combine with the mayonnaise and curry powder.

Assemble the tacos

  • Load up the taco shells with the mackerel and pickled onion & cucumber. Tuck in and enjoy!
