Coronation Chickpeas

This is a protein and fibre packed meal, spiked with all the flavour from the aromatic curry spices. Comes together in 20 minutes, making it you go-to midweek dinner or lunch. You can make this dish vegan by subbing the yoghurt for a vegan alternative.

Ingredients

  • onion 1 (diced)
  • garlic cloves 2 (crushed)
  • chickpeas 800 g (drained)
  • curry powder 2 tsp
  • Greek yoghurt 200 g
  • frozen green beans 200 g
  • mini naan 4

Method

Prep the ingredients

  • Peel and dice the onion. Peel and crush the garlic. Drain the chickpeas.

Cook the Coronation chickpeas & green beans

  • Heat a dash of oil in a large frying over a medium heat. Add the onion and fry for 5-6 minutes until starts to soften. Add the garlic and curry powder and fry for another minute.
  • Add the chickpeas and cook for 5 minutes. Then stir in the Greek yoghurt and cook for another minute.
  • Cook the green beans in boiling, salted water, until just tender (2 - 3 minutes).

Finish the dish

  • Warm up the naans as per the packet instructions.

Plate up

  • Serve the Coronation chickpeas and green beans alongside the naans. Tuck in and enjoy!
