Sausage & Mash Pie

Nothing more comforting than a pie. Mine has cheese for a good measure. Whether served as a centrepiece for a cosy family dinner or shared among friends during a festive gathering, this pie is a winner.

Ingredients

  • potato 1.5 kg (cubed)
  • red onion 1 (sliced)
  • chicken gravy granules 1 ½ tbsp
  • pork sausages 455 g
  • plain flour 2 tbsp
  • mild cheddar cheese 100 g (grated)
  • butter 40 g
  • Dijon mustard 2 tsp
  • green beans 220 g

Method

  • Preheat the oven to 200°C/180°Cfan.
  • Peel and chop your potatoes into small chunks. Boil them until soft (10-12 minutes) in salted water.
  • Peel and slice the red onion.
  • Make up the gravy by mixing the gravy granules with 600ml boiling water.
  • Heat a splash of oil in a large frying pan on a medium-high, and fry the sausages until browned then transfer from the pan and set aside. Chop the sausages into bite sized pieces when they’re cool enough to handle.
  • To the same pan add the onion and cook for 4-5 minutes. Once the onions are soft, add the flour and fry for a couple of minutes, add the chopped sausages back into the pan with the gravy and mix well. This is your sausage filling.
  • Drain the potatoes, then mash with the butter and Dijon mustard and season to taste.
  • Add the sausage filling to a baking dish and top with the mash, then sprinkle over the remaining cheese.
  • Bake the pie in the oven for 20-25 minutes until bubbling and hot.
  • While the pie is baking, prepare the green beans. Bring a pan of salted water to the boil. Cook the beans in the water until just tender, around 3 - 4 minutes. Drain and set aside.
  • Plate up the pie with a side of the green beans and enjoy!
