Crispy Cheesy Eggs With Flatbreads

A super speedy and delicious dinner, or lunch. Packed with protein from the eggs and comes together in no time. Cooking the eggs in garlic and cheddar gives them a deliciously crispy bottom. A touch of harissa adds lovely heat.

Ingredients

  • grated cheddar cheese 100 g
  • garlic cloves 2 (crushed)
  • paprika 1 tsp
  • egg 8
  • natural yoghurt 100 g
  • harissa paste to serve
  • folded flatbreads 4

Method

  • Grate the cheddar (if not already grated). Peel and crush the garlic.
  • Heat a dash of oil in a large frying pan over a medium heat. Add the garlic and paprika and fry for 1 minute.
  • Carefully crack the eggs into the pan. Top with the grated cheese and cover with a lid. Fry to your liking - 3 minutes for a runny yolk, 4-5 minutes for a medium yolk and 6 minutes for a hard yolk.
  • Meanwhile, warm up the flatbreads as per packet instructions.
  • Top the flatbreads with some yoghurt, the cheesy eggs and a swirl of harissa. Enjoy!
