Creamy Sausage & Spinach Gnocchi

This recipe is part of our 30 Min Dinners recipe series. A true one pan wonder, featuring one of our favourite kitchen hacks, a pack of sausages! As the sausages are already seasoned, they’re a great way of getting a speedy, easy meal on the table. Added bonus to this recipe - there’s no prep required, simply get cooking straight away! Once the sausages have crisped up, simply add your gnocchi, spinach and cream cheese. Result? A comforting, creamy dish that’s ready to eat in 20 minutes.

Ingredients

  • pork sausages 400 g (crumbled)
  • garlic granules 2 tsp
  • chicken stock cube 1
  • gnocchi 800 g
  • cream cheese 100 g
  • spinach 1 handful

Method

  • Heat a dash of oil in a large frying pan on a medium-high heat.
  • Remove the skin from the sausages and crumble the sausage meat into the pan. Cook for a few minutes until the sausage meat starts to crisp up.
  • Stir in the garlic granules and cook for a minute.
  • Make up the chicken stock cube with 100ml boiling water per serving.
  • Add the chicken stock, gnocchi, and cream cheese to the pan. Cook for 5 minutes until the gnocchi is heated through.
  • Stir in the spinach and cook until it wilts. Check the seasoning and adjust to taste. Plate up and enjoy!
