One Pan Chorizo & Smoky Tomato Orzo

The dish to make when you can’t be bothered to cook! With very little prep and minimal ingredients, this is a proper one pan dish. Chorizo adds an intense flavour boost - a little goes a long way, then layer in an extra smoky note with smoked paprika. The orzo simmers gently in the chorizo and tomatoes, and in 25 minutes you’ve got a delicious dinner on the table. To keep this vegetarian simply swap the chorizo for your favourite veggie sausage and use a veggie stock cube. Ingredients

  • chorizo 200 g (diced)
  • red onion 1 (diced)
  • orzo 300 g
  • cherry tomatoes 300 g
  • chicken stock cube 1
  • paprika 2 tsp
  • spinach 1 handful

Method

Prep the chorizo

  • Roughly dice the chorizo, if it’s not diced already. Peel and dice the red onion.

Cook the dish

  • Heat a large pan (one with a lid) on a medium heat, stir in the chorizo and cook for 3 mins. The chorizo releases oil as it cooks so there's no need to add oil to the pan.
  • Once it starts to release its oil, stir in the red onion and cook for 3 mins. Season with a pinch of salt and pepper.
  • Make up the stock cube with 125ml boiling water per serving, for example if you are cooking for 4 people you will need 500ml water.
  • Add the orzo, cherry tomatoes, paprika and stock into the pan and mix well.
  • Pop a lid on top and leave to simmer gently for 10 minutes, or until the orzo is cooked through. Check halfway through cooking and you may need to add extra water and give it a good stir.

Finish the dish

  • Check the seasoning and adjust to taste to how you like it.
  • Stir through the spinach and cook for another minute, or until the spinach is wilted.
  • Then plate up and enjoy!
