Smoky chorizo, together with kale and creamy Parmesan are the heavy hitters in this 5 ingredient dish that's ready to eat in 25 minutes. A little bit of chorizo goes a long way and is a great hack for adding instant flavour to homemade dishes. If you prefer you can swap the kale for spinach or cabbage.

Ingredients

  • onion 1 (diced)
  • chorizo 200 g (diced)
  • rigatoni pasta 300 g
  • kale 80 g (sliced)
  • grated Parmesan 40 g (grated)

Method

Prep the ingredients

  • Peel and dice the onion. Dice the chorizo, if you're using cooking chorizo you can crumble it instead.

Cook the chorizo & onion

  • Heat a large frying pan on a medium heat (no need to add oil, the chorizo will release oil). Add the chorizo and cook for a minute then stir in the onion so that it cooks in that delicious chorizo oil, for around 7 minutes.

Cook the pasta & grate the Parmesan

  • Meanwhile, cook the pasta in plenty of boiling salted water. You’ll use some of the pasta cooking water in the next step so don’t throw it away!
  • Grate the Parmesan, unless already grated.

Add the kale & finish your dish

  • Tear any of the larger pieces of kale into smaller pieces (to help it all cook evenly). Add a few tablespoons of the pasta cooking water into the pan with the onion and chorizo and mix vigorously.
  • Tip in the kale and cook for a couple of minutes until wilted (adding a splash more pasta water if needed), then stir in the rigatoni.

Plate Up

  • Plate up and scatter the Parmesan over the pasta. Add more Parmesan to garnish as you like. Tuck in and enjoy!
