Chicken Gyros

These chicken gyros are so tasty and perfect for an easy midweek meal. This is my go to marinade for the juiciest chicken cooked in the air fryer and I think you’ll agree that it’s a real crowd pleaser. Once the chicken is cooked it’s sliced then wrapped up in flat breads with fries and salad. You’ll have dinner sorted in no time!

Ingredients

  • chicken thighs 500 g
  • olive oil 2 tbsp
  • smoked paprika 1 tsp
  • dried oregano 1 tsp
  • garlic paste 1 tsp
  • fries 200 g
  • folded flatbreads 4
  • cherry tomatoes 150 g (diced)
  • red onion 1 (diced)
  • cucumber 1 (diced)
  • tzatziki dip to serve

Method

  • Place the chicken thighs into a bowl along with the oil, paprika, oregano, garlic paste and a pinch of salt, stir well then cover. Thread onto metal skewers. I like to do one large shawarma on two skewers.
  • Preheat your air fryer to 180°C.
  • Place the skewers onto a rack inside your air fryer drawer and cook for 35 minutes or until the internal temperature of the chicken reaches at least 75°C.
  • If you have an air fryer with 2 drawers, cook the fries in the other drawer, according to the packet instructions, while the chicken is cooking. Alternatively, cook the fries in a conventional oven according to the packet instructions.
  • Meanwhile, make the salad by dicing the cherry tomatoes, red onion and cucumber. Mix together and season with a pinch of salt and pepper.
  • Just before the chicken is cooked warm through the flatbreads, according to the packet instructions.
  • Carve the cooked chicken on the skewers then layer up the chicken on your flatbreads with the tzatziki, salad and fries. Wrap up the flatbreads and enjoy!
