Air Fryer Chicken Caesar Skewer Wraps

I love this dish, as I can prepare it the evening before, so all I need to do on the night is prep the wraps and pop the air fryer on! These deliciously tender, juicy chicken skewers marinated in a creamy Caesar dressing cook to perfection in the air fryer. They’re perfect for a speedy weeknight dinner or barbecue. If you're using wooden skewers, remember to soak them for at least 10 minutes before using so they don't burn in the air fryer. Recipe adapted from The Ultimate Air Fryer Cookbook 15 Minute Feasts by Clare Andrews.

Ingredients

  • chicken breast 2 (diced)
  • Caesar dressing 6 tbsp
  • garlic granules 1 tsp
  • plain tortilla wraps 4
  • little gem lettuce 1 (leaves picked)
  • Parmesan 1 handful
  • croutons to garnish

Method

  • Dice the chicken breasts. In a bowl, toss the chicken with most of the Caesar dressing (keep some back for drizzling in your wraps too!), garlic granules, a good pinch of pepper and a little salt. You can leave this to marinate overnight too.
  • Thread the marinated chicken onto your skewers and spray well with oil. Be careful not to pack them too tightly onto the skewers, as you want space for the heat to circulate in the air fryer.
  • Preheat your air fryer to 190°C for about 3 minutes.
  • Arrange the skewers directly on the crisper plate and cook for 10–12 minutes, turning halfway, until cooked through and slightly charred at the edges.
  • Fill your wraps with the picked little gem lettuce, chicken, Parmesan, an extra drizzle of Caesar dressing and some crunchy croutons.
