Air Fryer Chicken, Brie & Cranberry-Stuffed Bacon Parcels

These are the most delicious parcels you’ll open this festive season! We’re using Finnebrogue’s Naked Smoked Streaky Bacon, made without nitrites and packed with rich, savoury flavour that adds serious depth to every bite. Chicken breasts stuffed with a molten brie and cranberry centre, wrapped in bacon, then air fried until golden. A super easy recipe, that you can easily whip up on a busy weeknight, yet it looks luxe enough for festive entertaining. While they look impressive they are surprisingly simple to make! Served alongside golden, crispy potatoes with a hint of sage and garlic. A perfect festive dinner to enjoy in December, and beyond.

Ingredients

  • baby potatoes 600 g (chopped)
  • dried sage 2 tsp
  • garlic granules 2 tsp
  • chicken breast 4
  • brie 100 g (chopped)
  • cranberry sauce 2 tbsp
  • Finnebrogue naked smoked streaky bacon 200 g
  • spinach 80 g

Method

Cook the crispy sage potatoes

  • Wash and chop the baby potatoes into small cubes (no need to peel them). Add them to the air fryer.
  • Toss the potatoes in the dried sage and garlic granules. Add a dash of oil and season with salt and pepper.
  • Cook the potatoes in the air fryer for 25 minutes at 200°C. (Alternatively you can cook them in the oven at 200°C. for 30 - 35 minutes)

Prep the Chicken, Brie & Cranberry-Stuffed Bacon Parcels

  • Meanwhile, prep the chicken.
  • Cut a little slit in the centre of each chicken breast and stuff with a piece of brie and a spoon of cranberry sauce. Fold the chicken breast back over on itself then wrap each piece in 2 - 3 rashers Finnebrogue Naked Smoked Streaky Bacon. Repeat until all the parcels are assembled.

Cook the Chicken, Brie & Cranberry-Stuffed Bacon Parcels

  • Drizzle the chicken & bacon parcels with some oil (or cooking oil spray) then cook in the air fryer for 17 - 18 minutes at 190°C. (Alternatively you can cook them in the oven at 200°C. for 25 - 30 minutes)

Dress the spinach & Plate Up

  • In a bowl, dress the spinach with your favourite oil and season with salt and pepper.
  • Plate up the Chicken, Brie & Cranberry-Stuffed Bacon Parcels with the crispy sage potatoes and spinach, then tuck in and enjoy!
