Cheesy Tomato Bean Bake

This one is a true storecupboard hero! Our beautiful tomato sauce is made by caramelising tomato puree to create an amazing flavour. Add tinned tomatoes, creamy butter beans and spinach, then finish with cheesy garlicky breadcrumbs. You can easily swap the butter beans for red kidney beans, cannellini beans,chickpeas or even baked beans.

Ingredients

  • red onion 2 (diced)
  • tomato purée 3 tbsp
  • butter beans 800 g
  • chopped tomatoes 800 g (chopped)
  • garlic granules 1 tbsp
  • dried oregano ½ tbsp
  • grated mozzarella 100 g (grated)
  • grated cheddar cheese 50 g
  • panko breadcrumbs 2 tbsp
  • spinach 2 handful

Method

  • Dice the red onion. In a large ovenproof dish or casserole dish, heat a dash of oil on medium heat. Add the red onion and cook for around 5 minutes until it starts to soften (add a pinch of salt to help speed up the cooking process).
  • Stir in the tomato puree. This is where you are going to add lots of flavour! Cook the tomato puree on a medium-high heat for 5 minutes, until it starts to caramelise and turn a deep brick-red colour (you may need to add another dash of oil). Keep stirring it as it cooks to stop it catching/burning.
  • Add the butter beans, along with half the liquid from one of the tins (it will be around 150ml liquid, adding it helps the flavour and consistency of your sauce). Stir in the chopped tomatoes, half of the garlic granules and half the dried oregano. Stir well and season to taste with salt and pepper.
  • Leave the sauce to simmer gently while you make the cheesy breadcrumb topping and preheat the grill. Preheat the grill to high, or depending on the size of your pan you may prefer to use the oven (200C).
  • Make the cheesy breadcrumb topping by mixing together the grated mozzarella, cheddar, breadcrumbs and the rest of the garlic granules and oregano.
  • Stir the spinach into the tomato sauce then scatter over the cheesy breadcrumb topping. Pop the pan under the grill for around 5 minutes or until it is golden and bubbling. Plate up and enjoy!
