Slow Cooker Bolognese Pasta Bake

A delicious mash-up of my two favourite dishes I used to enjoy growing up - spaghetti bolognese and pasta bake. This will soon become a family favourite in your household too!

Ingredients

  • beef mince 400 g
  • onion 1 (diced)
  • carrot 1 (diced)
  • garlic cloves 3 (crushed)
  • dried oregano 1 tbsp
  • beef stock cube 1 (crumbled)
  • tomato purée 2 tbsp
  • chopped tomatoes 400 g
  • yeast extract 1 tsp
  • penne pasta 250 g
  • mild cheddar cheese 60 g (grated)

Method

  • Dice the onion and carrot. Crush the garlic.
  • Pop all of the ingredients into the slow cooker pot, apart from the pasta and cheese. Stir until well combined.
  • Put the lid on and cook on the high slow cooker setting for 3 hours or the low setting for 6 hours. In the meantime, grate your cheese, if it isn't already grated.
  • After either 3 or 6 hours, according to which setting you used, add in the pasta and 50ml of boiling water per serving (200ml if you're cooking for 4). Stir well. Scatter over the grated cheese. Pop the lid back on and cook on the high setting for a further hour.
  • Plate up and enjoy!
