Baked Chicken Satay Dumplings

This delicious dinner can be on the table in 25 minutes making it a super simple traybake dinner that the whole family will love. The gyoza dumplings come in many different flavours so choose your favourite, for me I love the chicken or the pork. Serve with a portion of rice to soak up the silky-smooth satay sauce.

Ingredients

  • lime 1 (juice)
  • red Thai curry paste 1 tsp
  • soy sauce 2 tbsp
  • ginger & garlic paste 1 tsp
  • sugar 1 tbsp
  • fish sauce 2 tbsp
  • smooth peanut butter 50 g
  • coconut milk 300 ml
  • chicken gyoza dumplings 240 g
  • fresh coriander 1 handful (chopped)
  • roasted peanuts 1 handful (crushed)
  • microwave rice 500 g
  • crispy chilli oil 2 tbsp

Method

Preheat the oven & prep the ingredients

  • Preheat the oven to 200°C/180°C fan. Juice the lime.

Prepare the bake

  • Make the satay sauce - in a baking dish, combine the Thai curry paste, soy sauce, ginger and garlic paste, sugar, fish sauce, peanut butter and coconut milk. Stir well to combine and break up the peanut butter. You can also use palm sugar instead to add deeper caramel notes.
  • Place the chicken gyoza into the satay sauce and bake for 20 minutes.

Cook the rice & prep the garnishes

  • Chop the fresh coriander. Crush the peanuts.
  • When the dish is nearly ready, cook the rice according to the packet instructions.

Plate up

  • Serve the Baked Satay Dumplings with the rice, topped with the fresh coriander, crushed peanuts and a drizzle of crispy chilli oil. Enjoy!
