Air-Fryer Bagel Pizzas

Air-fryers are crying out to be used for bagel-based recipes. They’re a great way to toast a bagel for sure, but why not add pizza toppings before air-frying for a meal that’s more nutritious than a simple toasted bagel. This is also a fun one to get kids involved in topped their own bagel pizzas. Recipe adapted from Budget Air-Fryer Cookbook by Jenny Tschiesche, published by Ryland Peters & Small (£16.99). Ingredients

  • dried oregano 1 tsp
  • courgette ½ (sliced)
  • bell pepper 2 (sliced)
  • mild cheddar cheese 120 g (grated)
  • tomato passata 150 g
  • bagel 4 (sliced)
  • mixed leaf salad 120 g

Method

  • Thinly slice the courgette and bell pepper. Drizzle with a little olive oil and cook in the air-fryer at 180ºC/350ºF for 8 - 10 minutes until cooked through. You could also use up any sliced leftover vegetables you have to hand. Mushrooms, sweetcorn, aubergine and/or sliced ham or shredded chicken would also work well.
  • Grate the cheese. Slice each bagel in half. In a bowl, mix the passata, with the oregano and a pinch of salt and pepper. Spread an equal amount on each bagel half. Top with the cooked vegetables, then scatter over the cheese.
  • Place the topped bagels in the air-fryer. Set the air-fryer to 180ºC/350ºF and cook for 4 minutes (no need to preheat the air-fryer).
  • Serve immediately with the mixed leaf salad. Enjoy!
