Bacon Wrapped Chicken with Crushed Herby Potatoes

Ingredients

  • chicken breast 4
  • bacon 8
  • baby potatoes 1 kg (halved)
  • butter 1 tbsp
  • dried parsley ½ tbsp
  • mixed leaf salad 100 g

Method

Cook the bacon wrapped chicken

  • Preheat the air fryer to 200°C.
  • Wrap each chicken breast with 2 slices of bacon.
  • Cook the chicken in the air fryer for 20 minutes, until bacon is crispy and chicken cooked through (internal temperature of 75°C).

Cook the potatoes

  • While the chicken is cooking, halve the potatoes and boil in a pan of salted water for 12-15 minutes until cooked through, then drain.

Season the potatoes

  • Crush the potatoes gently with the back of a spoon. Stir in the butter and dried parsley and season to taste with salt.

Plate up

  • Serve the bacon wrapped chicken breasts with the herby potatoes and mixed leaf salad. Enjoy!
