Bacon, Brie & Cranberry Toastie

Part of our Festive Favourites recipe series, recipes to enjoy in December and beyond! A special Plate Up festive twist on comfort food dishes. This one has all the festive flavours in a bubbling golden toastie. Crispy bacon, oozing brie and a cranberry mayo. You can make this on the stove, in the air fryer or under the grill. Perfect for using up Christmas Day leftovers too for that all important Boxing Day sandwich! Mix it up and add turkey, stuffing and shredded sprouts, it's up to you. This recipe is part of our Festive Favourites series. Easy midweek meals with a festive twist to whip up in December (and beyond).

Ingredients

  • bacon 8
  • cranberry sauce 2 tbsp
  • mayonnaise 4 tbsp
  • white bread 8 slice
  • brie 20 g

Method

  • Cook the bacon in the air fryer at 180°C for 5 - 7 mins, until the bacon is crispy.
  • Make the cranberry mayo by mixing together the cranberry sauce and mayonnaise. You'll also use extra mayonnaise for frying the bread.
  • You’ll need 2 slices of bread for each toastie. Spread one side of the bread with a little plain mayo. To cook each toastie, heat a frying pan on a medium heat and add the bread, plain mayo side down, touching the pan.
  • Spread some of the cranberry mayo on the bread, top with the brie and bacon, then another slice of bread, with the plain mayo side facing up.
  • Cook for a few minutes until the bottom piece of bread is golden, then carefully flip it over with a spatula.
  • Cook for another few minutes until the brie is starting to ooze. You can also cook the toastie in the air fryer at 180°C for around 7 - 8 minutes, or under the grill.
  • Slice in half, then tuck in!
