Air Fryer Kimchi Fritters

This is a brilliant brunch recipe, that also works as an easy lunch or dinner. I like to serve these fritters with a fried egg and lots of spicy sauce. Kimchi is a great fermented food to get into our diet, and you can get some great ones in the supermarket these days. I love anything that has a bit of a kick to it. Add vegetables like courgettes and carrots and you’ve a very tasty, filling and healthy meal. These have the added bonus of being gluten free. Ingredients

  • kimchi 150 g
  • courgette 125 g (grated)
  • carrot 125 g (grated)
  • egg 3
  • gluten-free flour 85 g
  • fresh coriander 1 handful (chopped)
  • avocado 1 ½ (sliced)
  • hot sauce to serve

Method

  • Preheat your air fryer to 180°C for 4 minutes.
  • Grate the courgette and carrot, then add them to a large bowl with the kimchi and one of the eggs. Fold in the gluten free self-raising flour and some of the chopped coriander and season well.
  • Spray the air fryer crisper plate with oil. Carefully place a large spoonful of the fritter mixture directly onto the plate and flatten slightly – it should be roughly 5cm wide. It doesn’t have to be neat, as the edges will go all crispy. Repeat with the rest of the mixture, making sure to leave enough space around each fritter.
  • Spray with more oil and cook at 180°C for 10–12 minutes until golden and crispy, turning halfway.
  • While the fritters are cooking, fry the eggs to how you like them. Serve up the fritters with the fried eggs and sliced avocado, with some optional hot sauce.
