20 minute Aubergine Pasta

This vibrant Aubergine Pasta dish is a great treat that combines tender aubergines with a robust sauce made from cupboard staples. It's incredibly easy to make, needing just 20 minutes cooking time, making it perfect for a busy evening meal.

Ingredients

  • aubergine 2 (chopped)
  • garlic cloves 4 (crushed)
  • fresh basil ½ handful (chopped)
  • fusilli pasta 300 g
  • capers 2 tbsp
  • tinned plum tomatoes 1
  • red wine vinegar 2 tbsp
  • sugar 2 tbsp
  • chilli flakes 1 tsp
  • Parmesan to serve

Method

Prep the ingredients

  • Cut the aubergines into large chunks. Peel and crush the garlic. Separate the stalks and the leaves of basil, chop the stalks.

Cook the pasta

  • Cook the penne according to the packet instructions. Drain when cooked, keeping some of the cooking water.

Cook the sauce

  • To make the sauce: heat a generous glug of oil in a large frying pan over a medium heat. Add the aubergines and fry for 4-5 minutes until nice and golden. You may need to add more oil as aubergines love oil.
  • Add the garlic, basil stalks, capers, sugar, red wine vinegar and chilli flakes, simmer for 4-5 minutes. Season to taste with salt.
  • Add the chopped tomatoes and simmer for another 5 minutes. Add the cooked pasta with some of the pasta cooking water to create a smooth sauce.

Plate Up

  • Serve the aubergine pasta with basil leaves, a crackling of black pepper and some Parmesan. Enjoy!
