15 Minute Creamy Chipotle Sausage Gnocchi

The dressing does all the heavy lifting here as it creates a velvety, flavour-loaded sauce with just the right balance of creamy richness, chipotle heat, and herby tang. It’s got that addictive ranch flavour, but with a bold smoky kick that makes every bite pop. High quality sausages (with no nasty additives) are cooked off until golden, with garlic and onion for depth, then let the gnocchi soak up all the spicy, saucy goodness. We’re using kale here but you can swap in for your preferred greens - spinach of cavolo nero would be delicious. Perfect for busy weeknights, but tasty enough to feel like a treat.

Ingredients

  • pork sausages 300 g (crumbled)
  • gnocchi 500 g
  • garlic cloves 2 (chopped)
  • frozen sliced peppers 300 g
  • kale 100 g (chopped)
  • Dr. Will's chipotle ranch dressing 60 g
  • crème fraîche 3 tbsp

Method

Cook the sausages & vegetables

  • Boil a kettle of water for the gnocchi.
  • To cook the sausages: heat a dash of oil in a large frying pan over a medium heat. Remove the sausage skins, crumble the sausage meat into the pan, and cook for 4-5 minutes until golden and caramelised, breaking the sausage meat up with the back of a spoon as it cooks.
  • While the sausages are cooking, peel and chop the garlic. Add the garlic, kale and frozen peppers to the pan and cook for 3 minutes until the kale wilts down, stirring regularly.

Cook the gnocchi

  • Meanwhile, cook the gnocchi in a pan of boiling salted water for 2-3 minutes, or until they float to the surface, then drain.

Finish the dish & Plate Up

  • To finish the dish: tip the cooked gnocchi into the sausage pan, with the Dr. Will’s Chipotle Ranch Dressing and the crème fraîche. Add a few tablespoons of water, adding more if you want a thinner consistency. Mix everything together vigorously and warm through for 2 - 3 minutes until the sauce is glossy. Season to taste.
  • Plate up - spoon into bowls and serve straight away. Enjoy!
