Vegetarian Coca - Spanish Pizza Breads

A wholesome vegetarian dish. It's José's delicious Spanish take on pizza or flatbread. Experiment with your preferred toppings. Note: Additional time will be spent proving the dough.

Ingredients

  • salt 15 g
  • sugar pinch
  • plain flour 520 g
  • olive oil 30 g
  • dried active yeast 15 g
  • fresh thyme 15 g
  • red onion 2 (sliced)
  • chestnuts 150 g (crumbled)
  • butternut squash 1 (chopped)

Method

  • Chop the butternut squash into small chunks and the red onions into wedges.
  • Mix the dried active yeast in a bowl with 245 ml lukewarm water and a pinch of sugar. Cover and leave to stand for 30 minutes, until the mixture starts to bubble.
  • Sift the plain flour (save a little for dusting later on) and the salt into the bowl of a stand mixer. Add the yeast water and 1/2 the olive oil and knead with the dough hook for 5 minutes on a low speed. Or by hand for 10 - 15 minutes. Add more water if the mixture looks a little dry.
  • Leave to stand for 10 minutes then knead the dough again for 5 minutes until it is smooth and elastic. Cover and stand for 1 hour, or until doubled in size.
  • Preheat the oven to 200°C/180°C fan/gas mark 6.
  • Put the butternut squash and red onions into a roasting tin, drizzle with olive oil and season with fine sea salt and the thyme or sage leaves. Roast for 30 minutes until starting to become golden and tender. Remove from the oven.
  • Divide the dough into six equal portions, then roll out on a lightly floured surface into approx 30cm oval shapes.
  • Dust the baking tray with plain flour. Place the dough pieces on top. Cover with a clean tea towel and leave to stand in a warm place for 15 minutes.
  • Heat the oven as high as it will go. Brush the dough bases lightly with olive oil and sprinkle with fine sea salt.
  • Crumble the chestnuts and toss with the butternut squash and red onions and divide among the breads, leaving a 2cm border around the edge. Bake for 10-12 minutes, or until the bases are golden and crisp. Serve the cocaimmediately.
