Speedy Vegan Mushroom Pasta

This vegan pasta dish is packed full of earthy mushrooms. Using just 5 core ingredients it's ready in 15 minutes! Minimum effort and washing up with maximum flavour!

Ingredients

  • free from spaghetti 300 g
  • chestnut mushrooms 400 g (sliced)
  • garlic cloves 3 (crushed)
  • soya cream 250 ml
  • fresh parsley 1 handful (chopped)

Method

  • Cook the spaghetti in a pan of boiling salted water, according to the packet instructions.
  • Slice the mushrooms. Peel and crush the garlic. Finely chop the parsley
  • Heat a dash of oil in a large frying pan on a medium-high heat and lightly fry the mushrooms until browned. Stir in the soya cream, garlic, chopped parsley and a pinch salt and pepper and simmer for a few minutes.
  • Once the spaghetti is cooked, drain it and add it to the creamy mushroom mixture and stir to combine. Serve up and enjoy!
