One Pan Pizza Orzo

We love a mash up recipe that combines two of our favourite foods - pizza (of course!) and orzo, the rice shaped pasta. Introducing our Pizza Orzo Bake. Orzo cooked in a creamy tomato sauce laced with mozzarella and cheddar. Finished with pepperoni and baked until golden and bubbling. Even better, it's all made in one pan so less washing up. Let's get cooking!

Ingredients

  • red onion 1 (chopped)
  • pepperoni 120 g
  • vegetable stock cube 1
  • orzo 300 g
  • chopped tomatoes 400 g
  • tomato purée 2 tbsp
  • garlic granules 2 tsp
  • dried oregano ½ tbsp
  • grated mozzarella 150 g (grated)
  • grated cheddar cheese 50 g
  • crème fraîche 2 tbsp

Method

  • Chop the red onion. Roughly chop half the pepperoni, or you can tear it into small pieces with your hands if you prefer. Reserve the rest of the pepperoni in whole slices until step 5.
  • Heat a dash of oil in an ovenproof casserole dish or pan (ideally one with a lid). Cook the red onion on a medium heat for a few minutes. Add the sliced/torn pepperoni and cook for 2 minutes. Meanwhile, make up the stock cube with 700ml boiling water.
  • Stir in the orzo, chopped tomatoes, tomato puree, garlic granules and oregano then mix well. Pour in the stock and bring to the boil. Pop the lid on and leave the orzo to simmer for around 8 - 10 minutes, until it is cooked (stir occasionally). Add more water to the pan if needed.
  • When the orzo is nearly cooked, preheat the grill, or depending on the size of your grill you may prefer to use your oven - if so then preheat it to 200°C/180°C fan.
  • Stir in half the mozzarella and all of the cheddar and crème fraîche then mix well. Scatter the remaining mozzarella on top. Layer the whole pepperoni slices on top in a single layer.
  • Pop under the grill for 5 - 10 minutes, until golden and bubbling. Please note that grills may vary, check after 5 minutes and adjust the cooking time as needed.
  • Leave to stand for a few minutes before serving then plate up and enjoy!
