Vegan Mac n Cheese

This vegan mac n cheese is a perfect warming comfort food dish. This super easy vegan sauce packs a flavour punch with the nutritional yeast and the cashews add lots of creaminess. It's also a great one to prep ahead of time then pop in the oven when you are ready to cook it.

Ingredients

  • gluten free macaroni 400 g
  • cashews 100 g
  • almond milk 300 ml
  • nutritional yeast 6 tbsp
  • Dijon mustard 2 tsp
  • olive oil 1 tbsp
  • grated vegan cheese 50 g
  • mixed leaf salad 120 g

Method

  • Preheat the oven to 200°C/180°C fan/gas mark 6.
  • Cook the pasta according to the packet instructions.
  • Meanwhile place the cashews into a blender cup and add the almond milk, nutritional yeast, dijon mustard, olive oil and large pinch of salt and pepper and blend until smooth.
  • Drain the pasta and add to an ovenproof dish. Pour over the sauce and mix well. Sprinkle the grated vegan cheese on top. Bake in the oven for 20 minutes or until golden and bubbling.
  • Leave to stand for a few minutes before serving then plate up and enjoy alongside the mixed leaf salad.
