Who doesn't love a burger? This spicy chicken burger is a super easy recipe to whip up, served alongside crispy potato wedges.

chicken breast 400 g
cajun seasoning 1 tbsp
Maris Piper potatoes 600 g
mayonnaise 4 tbsp
tomatoes 1 (sliced)
mild cheddar cheese 30 g (sliced)
burger buns 4
iceberg lettuce 1 handful
guacamole 50 g
Method
Preheat the oven to 220°C/200c fan.
Wash the potatoes and then chop into wedges (there’s no need to peel them). Place them on a large baking tray and drizzle with olive oil, salt and pepper and mix together, ensure they are coated evenly. Roast in the oven on the top shelf for 25 minutes until golden.
Place the chicken breasts in a bowl with the Cajun seasoning and a splash of olive oil.
Heat a frying pan over a medium heat. Add the chicken breast to the pan and cook for 2 minutes on each side. Then place the pan, if ovenproof, into the oven to finish off cooking. If the pan is not ovenproof, you can either place the chicken onto the potato wedge tray if there is space or, if not, pop onto another baking tray.
Bake in the oven for a further 10 minutes until completely cooked through. After removing the cooked chicken from the oven, place a cheese slice on top of each chicken breast so the residual heat melts the cheese nicely before assembling the burger
Toast the burger buns.
Assemble the burgers by spreading the mayonnaise on the buns. Add the sliced tomato and lettuce to the base of the bun before placing the cooked chicken breast on top of the cheese (slice your cheese if it isn't sliced. You could also add a dollop of guacamole - mix up your toppings as you like! Place the top bun on the burger and serve with the wedges, enjoy!
