Turkey Bolognese Gnocchi

Our bubbling bolognese is a leaner spin on the traditional recipe, using turkey mince. Topped with creamy mozzarella then grilled until golden. Best of all it's a one pan dish - minimum washing up, maximum flavour!

Ingredients

  • onion 1 (sliced)
  • carrot 2 (diced)
  • garlic cloves 3 (crushed)
  • turkey mince 300 g
  • tomato purée 2 tbsp
  • dried mixed herbs 1 tbsp
  • chicken stock cube 1
  • chopped tomatoes 400 g (chopped)
  • gnocchi 500 g
  • grated mozzarella 75 g
  • fresh basil 1 handful (leaves picked)

Method

  • Thinly slice the onion. Chop the carrots into small dice. Crush the **garlic cloves**.
  • Heat a dash of oil in a large frying pan or ovenproof dish. Add the onion and carrots and cook for 10 minutes, until softened. Add the turkey mince into the pan and cook for 5 minutes. As the turkey mince cooks break it up with the back of a spoon.
  • Stir in the garlic, tomato purée and dried mixed herbs and cook for 2 minutes on a high heat, stirring frequently.
  • Make up the chicken stock cube according to the packet instructions, with 100ml boiling water per person. Pour the stock and chopped tomatoes into the pan. Bring to the boil, then reduce the heat and simmer gently for 12 minutes, until the sauce has thickened.
  • Heat the grill to high.
  • Stir the gnocchi into the pan and mix well. Scatter the grated mozzarella on top. Grill for 5 minutes or until golden brown and bubbling.
  • Pick the basil leaves. Scatter the fresh basil on top and serve directly on the table for everyone to help themselves. Enjoy!
