Easy Tuna Pasta

This is one of my favourite speedy dinners using mostly store cupboard ingredients. The combination of tender tomatoes, flaky tuna and touch of sharpness from the olives will have you coming back for seconds!

Ingredients

  • free from spaghetti 300 g
  • canned tuna 2 (drained)
  • garlic cloves 4 (crushed)
  • shallot 2 (chopped)
  • cherry tomatoes 200 g (quartered)
  • black olives 80 g (quartered)
  • chilli flakes pinch
  • fresh parsley 1 handful (chopped)
  • lemon ½ (juice)

Method

  • Cook the pasta according to the packet instructions.
  • Meanwhile, finely dice the shallot, crush the garlic, quarter the tomatoes and slice the olives. Roughly chop the parsley. Juice the lemon.
  • Heat a large non stick pan with a dash of oil, add the shallot, crushed garlic, tomatoes, olives, chilli flakes, pinch of salt and pepper and fry together until softened, roughly 5 minutes.
  • Add the drained tuna, parsley, lemon juice to taste, and a splash of pasta water (directly from the pasta pot) and fry for a further minute.
  • Finally, drain the pasta and add to the pan and stir together. Adjust the seasoning to your taste, then plate up and enjoy!
