Tortellini Pizza Bowl

These pizza bowls are so easy and quick, all the flavours of your favourite pizza in an easy pasta dish! Ready to plate up in 20 minutes and guaranteed to put a smile on everyone’s face. This is a veggie version but you can make it your own by choosing different tortellini and adding different toppings.

Ingredients

  • red onion 1 (sliced)
  • black olives 50 g (chopped)
  • mozzarella cheese ball 125 g (chopped)
  • cherry tomatoes 300 g (halved)
  • garlic granules 1 tsp
  • dried oregano 2 tsp
  • tortellini 600 g
  • fresh basil 1 handful (leaves picked)

Method

Prep the ingredients

  • Peel and thinly slice the red onion. Chop the olives and mozzarella. Slice the cherry tomatoes in half.

Cook the dish

  • Heat a dash of oil in a large pan. Add the onion and gently fry for 5 minutes, stir in the tomatoes, garlic granules, and oregano. Cook for around 5 minutes, until the tomatoes start to burst.
  • Meanwhile, cook the tortellini in a pan of boiling salted water, for 2 - 3 minutes, or according to the packet instructions.
  • Drain the tortellini and add to the pan with the tomatoes. Scatter over the mozzarella and olives.
  • If you like you can pop it under the grill at this stage for a couple of minutes to melt the mozzarella, or pop a lid on top and let it sit for a few minutes (this will melt it too).

Plate up

  • Plate up and scatter the fresh basil leaves on top. Enjoy!
