Tomato Dumpling Salad

A delicious speedy salad, that makes the most of out a pack of frozen gyoza! Crispy pan fried gyozas and juicy tomatoes are dressed with a simple vinaigrette and spring onions. Ready to eat in 15 minutes, deliciousness awaits you!

Ingredients

  • cherry tomatoes 200 g (halved)
  • cucumber 1 (chopped)
  • spring onions 4 (chopped)
  • olive oil 2 tbsp
  • soy sauce 2 tsp
  • red wine vinegar 1 tbsp
  • vegetable gyoza dumplings 20

Method

Prep the ingredients

  • Halve the cherry tomatoes. Chop the cucumber and spring onions.

Make the vinaigrette

  • In a small bowl combine the oil, soy sauce and the red wine vinegar, season to taste with salt and pepper (the **soy sauce* will add salt).

Cook the gyoza

  • Heat a dash of oil in a large frying pan over a medium heat. Add the gyoza, seam side up. Fry for 4 minutes.
  • Carefully add 4 tbsp of water to the pan (it will hiss), cover with a lid and let them steam for another 4 minutes.

Assemble the salad

  • In a large bowl combine the fried gyoza, tomatoes, cucumbers, spring onion and drizzle over the vinaigrette. Plate up and enjoy!
