firm tofu 450 g
olive oil 2 tbsp
paprika ½ tsp
onion granules 1 tsp
garlic powder ½ tsp
little gem lettuce 1 ¼ (chopped)
bell pepper 1
red cabbage ½ (shredded)
tomatoes 5 (quartered)
lime ½ (juice)
smooth peanut butter 3 tbsp
maple syrup 2 tbsp
tamari 2 tbsp
sesame oil 1 tbsp
Method
Drain and pat dry the tofu with a paper kitchen towel, cut the tofu into 2cm cubes.
In a large mixing bowl combine the tofu, ½ of the olive oil, paprika, ½ of the onion granules and ½ of the garlic powder, coating all of the tofu pieces.
Heat the remaining olive oil in a large pan over a medium high heat and fry the tofu for about 10 minutes, turning frequently until all sides are golden.
Roughly chop the lettuce. Thinly slice the pepper. Thinly shred the red cabbage. Quarter the tomatoes. Juice the lime.
Prepare the peanut butter dressing. In a small bowl or a jar combine the peanut butter, maple syrup, tamari, sesame oil, lime juice, the remaining onion granules and garlic powder.
In a large bowl combine the vegetables, tofu and peanut butter dressing, mix well. Plate up and enjoy!
