Crispy Tofu Salad

Ingredients

  • firm tofu 450 g
  • olive oil 2 tbsp
  • paprika ½ tsp
  • onion granules 1 tsp
  • garlic powder ½ tsp
  • little gem lettuce 1 ¼ (chopped)
  • bell pepper 1
  • red cabbage ½ (shredded)
  • tomatoes 5 (quartered)
  • lime ½ (juice)
  • smooth peanut butter 3 tbsp
  • maple syrup 2 tbsp
  • tamari 2 tbsp
  • sesame oil 1 tbsp

Method

  • Drain and pat dry the tofu with a paper kitchen towel, cut the tofu into 2cm cubes.
  • In a large mixing bowl combine the tofu, ½ of the olive oil, paprika, ½ of the onion granules and ½ of the garlic powder, coating all of the tofu pieces.
  • Heat the remaining olive oil in a large pan over a medium high heat and fry the tofu for about 10 minutes, turning frequently until all sides are golden.
  • Roughly chop the lettuce. Thinly slice the pepper. Thinly shred the red cabbage. Quarter the tomatoes. Juice the lime.
  • Prepare the peanut butter dressing. In a small bowl or a jar combine the peanut butter, maple syrup, tamari, sesame oil, lime juice, the remaining onion granules and garlic powder.
  • In a large bowl combine the vegetables, tofu and peanut butter dressing, mix well. Plate up and enjoy!
