Tikka Dahl

This comforting dish perfect for quick family dinners. It combines the aromatic flavours of tikka paste with hearty lentils and is served with fluffy basmati rice, we're shaving off time by using tinned cooked lentils and this dish happens to be naturally vegan, gluten and dairy free.

Ingredients

  • basmati rice 240 g
  • onion 2 (sliced)
  • tikka masala paste 2 tbsp
  • tinned lentils 800 g (drained)
  • chopped tomatoes 400 g
  • fresh coriander 1

Method

Cook the rice

  • Cook the rice according to the packet instructions.

Cook the dhal

  • Peel and slice the onions.
  • To cook the dhal - heat a dash of oil in a large frying pan over a medium heat. Add the onions and fry for 7-8 minutes until they soften.
  • Add the tikka paste and fry for a minute until fragrant.
  • Add the lentils and chopped tomatoes, season to taste with salt. Simmer for 5 minutes then check the seasoning and adjust to taste.

Plate up

  • Serve the tikka dhal with the rice and fresh coriander sprinkled on top. Enjoy!
