Tex Mex Burger

This beef burger recipe is a real riot of flavours! Melted cheese, zesty salsa and creamy guacamole are the perfect accompaniments for this Tex Mex style burger. As a delicious twist you can also add some crushed tortilla chips for extra crunch.

Ingredients

  • sweet potato fries 500 g
  • cherry tomatoes 150 g (chopped)
  • beef burger 4
  • red onion 1 (chopped)
  • fresh coriander 1 handful (chopped)
  • lime 1 (juice)
  • mild cheddar cheese 70 g
  • avocado 3 (crushed)
  • sour cream 150 g
  • burger buns 360 g
  • olive oil 3 tbsp

Method

  • Preheat the oven to 220°C/200°C fan/gas mark 7. Add the sweet potato fries to a baking tray and toss with a drizzle of oil plus a pinch of salt and pepper. Bake in the oven according to packet instructions.
  • Finely chop the tomatoes, red onion, mixed chillies and coriander leaves and stalks . Juice the lime.
  • To make the salsa, add the tomatoes, half the red onion, half the chilli and half the coriander to a bowl. Stir in half the lime juice and 3/4 of the olive oil. Season to taste and set aside to marinate.
  • Heat the rest of the olive oil in a large frying pan on a medium high heat. Cook the burgers for 4 - 5 minutes on each side, until cooked through. For the last minute of cooking add a slice of cheese on top of each burger and allow it to melt.
  • Meanwhile, make the guacamole. Smash the avocado flesh with fork. In a bowl mix together the avocado with the rest of the red onion, chilli and coriander. Season to taste with the rest of the lime juice, salt and pepper.
  • Build the burger by spreading some guacamole on the base of the burger buns, then top with the salsa and sour cream. Serve alongside the sweet potato fries and enjoy!
