Creamy Porcini Mushroom & Parmesan Tagliatelle

This is the perfect indulgent pasta recipe, creamy and packed with flavour. The porcini mushrooms add an earthy depth to the dish and the moreish cream sauce will have you coming back for A-more!

Ingredients

  • tagliatelle pasta 300 g
  • dried porcini mushrooms 100 g
  • olive oil 1 tbsp
  • garlic cloves 3 (sliced)
  • double cream 250 ml
  • Parmesan 100 g (grated)
  • dried sage 1 tsp

Method

  • In a heatproof bowl, pour boiling water over the dried porcini mushrooms and leave to soak for 10 minutes. Finely slice the garlic cloves.
  • Add the tagliatelle pasta to a pan of salted boiling water and cook until al dente, then drain.
  • Heat the olive oil in a frying pan on a medium heat and add the garlic. Fry until golden. Add the double cream, dried sage and season with salt and pepper. Simmer for around 10 minutes until the sauce reduces and thickens.
  • Add the Parmesan and mix well. Drain and add the dried porcini mushrooms. Stir in the cooked pasta and mix well.
  • Finish with extra Parmesan on top. Buon appetito!
