Taco Black Bean Rice

This 5 ingredient dinner is easily whipped up using store cupboard staples and frozen vegetables. Frozen vegetables are great to have on standby in the freezer. This recipe is also great for using up leftovers, if you have extra veg you can add in as you like!

Ingredients

  • onion 1 (diced)
  • olive oil 1 tbsp
  • basmati microwave rice 440 g
  • taco seasoning 2 tbsp
  • frozen mixed vegetables 300 g
  • black beans 800 g (drained)

Method

  • Finely dice the onion.
  • Heat the olive oil in a large pan on a medium heat. Add the onion and cook until softened.
  • Stir in the rice, taco seasoning, frozen vegetables and black beans. Fry together for a further 5 - 7 minutes, adding a dash of water if the pan gets too dry.
  • Check the seasoning and adjust to taste with salt and pepper.
  • Serve up and enjoy!
