Smash Sausage Tacos

Smash burgers meet tacos, featuring Porky Whites Premium Farmhouse Herb Pork Sausages, exclusive to Tesco. You’ve probably heard of smash burgers, but smash sausage tacos are where it’s at! Deliciously crisp smashed sausage, with a bright, zingy red pepper and sweetcorn salsa, quick-pickled red onions, crumbled feta and zingy lime. Prep all the components then serve up on the table for everyone to tuck in. Please note, if you are shopping with Sainsbury's, Ocado or Amazon Fresh, you will get regular pork sausages in your shop - the recipe will still be delicious!

Ingredients

  • red onion 1 (sliced)
  • red wine vinegar 2 tbsp
  • tinned sweetcorn 150 g (drained)
  • roasted red peppers 100 g (sliced)
  • lime 1 (wedges)
  • Porky Whites farmhouse sausages 400 g
  • soft taco wraps 8
  • smoked paprika 1 tsp
  • feta 100 g (crumbled)
  • sweet chilli sauce to serve

Method

Make the pickled red onions and the red pepper & sweetcorn salsa

  • Make the pickled red onion. Peel and thinly slice the red onion then add it to a bowl. Sprinkle over the vinegar with a sprinkle of salt and scrunch it together with your hands. Set it aside to pickle.
  • Drain the sweetcorn. Thinly slice the roasted red pepper.
  • In a bowl, mix together the sweetcorn and roasted red pepper. Stir in a dash of the brine from the roasted red pepper jar. Mix well, then season to taste with salt and pepper.

Cook the smash sausage tacos

  • Take the sausages and squeeze the sausage meat from the sausage casings into a bowl (discarding the casings).
  • Divide the sausage meat between the tortilla wraps, spreading the sausage meat thinly onto each wrap, leaving a small gap around the edges. Sprinkle a pinch of smoked paprika over the sausage meat.
  • Heat a large non-stick frying pan on a medium-heat, with a drizzle of oil. Add a tortilla, meat-side down and cook for 3 - 4 minutes until the sausage is golden and crispy.
  • Flip the tortilla over and cook for 1 minute on the other side. Repeat with all the tortillas.

Assemble the tacos & Plate Up

  • Slice the lime into wedges.
  • Top each tortilla with the red pepper salsa and pickled red onion, crumble over some feta, plus a drizzle of sweet chilli sauce. Serve with the lime wedges on the side to squeeze on top. Tuck in and enjoy!
