Sweet Chilli Halloumi Crispy Rice Salad

We’ve taken the crispy rice trend and made it effortless with our spin on this crunchy, flavour-packed favourite. Using pre-cooked Veetee Basmati Rice, all you do is spread it on a tray, drizzle with chilli crisp, soy sauce, and sesame oil then let the oven work its magic. The result? Golden, crispy, perfectly seasoned rice every time. Toss it with cubes of golden halloumi, cucumber, radishes and fresh salad leaves, for a dish that’s crunchy, spicy, and utterly addictive. This a smart, fuss-free way to enjoy the crispy rice trend at home.

Ingredients

  • Veetee heat & eat basmati rice pots 500 g
  • sesame oil 2 tbsp
  • soy sauce 2 tbsp
  • halloumi 450 g (cubed)
  • cucumber ½ (sliced)
  • radish 100 g (sliced)
  • lime 1 (juice)
  • sweet chilli sauce 6 tbsp
  • Greek yoghurt 200 g
  • sesame seeds 1 tbsp (toasted)
  • mixed leaf salad 120 g

Method

Cook the crispy rice

  • Preheat the oven to 200C/180C fan.
  • Take the Veetee basmati rice out of the packet, add it to a baking tray, breaking it up with a fork so there are no lumps. Drizzle over 1 tablespoon of the sweet chili sauce, sesame oil and soy sauce.
  • Mix well then spread the rice into one thin even layer, pressing it out as much as possible with the back of a spoon or your hands.
  • Bake in the oven for 35 - 40 minutes, halfway during the cooking time take out the tray and stir the rice. Check it carefully as depending on your oven it may crisp up quickly, adjust and turn the temperature down if needed.

Cook the halloumi

  • Drain the halloumi and pat it dry with kitchen paper. Chop into small cubes.
  • Add it to another baking tray and drizzle with a dash of oil, then pop in the oven for 12 - 14 minutes, turning halfway through the cooking time.

Prep the rest of the ingredients

  • Thinly slice the cucumber and radishes.
  • Juice the lime.
  • Make the sweet chilli dressing by mixing together the reserved sweet chilli sauce, Greek yoghurt and lime juice. Season to taste.

Assemble & Plate Up

  • In a large bowl, toss together the mixed leaf salad, cucumber, radishes, halloumi and crispy rice. Pour over the sweet chilli dressing and mix well.
  • Scatter over the sesame seeds, then tuck in and enjoy.
