Air Fryer Sweet Chilli Chicken Bowls

Chicken in a loaded bowl with a sticky sweet chilli glaze. Load up your bowl with smoky sweet potato wedges, lettuce, tomatoes, cucumber, served with your sticky sweet chilli chicken. Deliciousness on the table in 30 minutes!

Ingredients

  • sweet potato 600 g (wedges)
  • paprika 2 tsp
  • chicken breast 4
  • sweet chilli sauce 4 tbsp
  • cherry tomatoes 200 g (chopped)
  • bell pepper 1 (sliced)
  • jalapeños 1 tbsp (drained)
  • iceberg lettuce ½ (shredded)
  • sesame seeds 1 tbsp (toasted)

Method

Cook the sweet potato

  • Slice the sweet potato into wedges (no need to peel). Add to a bowl, drizzle with a dash of oil, sprinkle over the paprika and season with salt and pepper.
  • Cook in the air fryer for at 200°C for 20 minutes.

Cook the chicken

  • Meanwhile, drizzle the chicken with a dash of oil and cook in the air fryer at 200°C for 15 minutes, for the last few minutes of cooking drizzle over the sweet chilli sauce. If you have 2 baskets in your air fryer, you can cook the chicken and sweet potato in separate baskets - if you have 1 basket, add the chicken to the sweet potato basket and increase the cooking time by 5 minutes if needed.

Prep the bowl

  • Prep the rest of the bowl components. Halve the cherry tomatoes. Deseed and slice the bell peppers and mix with the drained jalapeños.

Assemble the bowls

  • Add a portion of sweet potato wedges to each bowl, then add the chicken, tomatoes, peppers, lettuce and jalapeños. Drizzle over the rest of the sweet chilli sauce with a sprinkle of sesame seeds. Tuck in and enjoy.
