Speedy Spicy Green Sausage Pasta

Coming at you with this super speedy spicy sausage pasta with a whole heap of healthy greens. We all have sad bags of kale, spinach or cavolo nero that take up space in the fridge and often go in the bin, but this recipe is a perfect way of using them up. Takes only 30 minutes to make, super cheap ingredients, and an absolute winner. The chilli gives it a real kick which I absolutely love. If you’re a pescatarian - substitute the sausage for anchovies, it will be delicious. Please note, you’ll need a food blender for this recipe.

Ingredients

  • fusilli pasta 300 g
  • garlic cloves 2
  • spring greens 200 g
  • mixed chillies 1
  • lemon 1 (zest)
  • pork sausages 4
  • butter 50 g
  • Parmesan 100 g

Method

Cook the fusilli & the greens

  • Cook the fusilli according to the packet instructions. Drain once cooked, reserving a cup or two of the cooking water.
  • Bring a pan of salted water to the boil, add the garlic cloves. Add the spring greens and cook until just tender, around 1 minute. Drain the greens.
  • Place the greens into a food processor and pulse, until just blended.

Cook the sausages & make the sauce

  • Chop the fresh chilli, remove the seeds if you like less heat. Zest the lemon. Remove the sausages from the casings and break into chunks.
  • Heat a dash of oil in a large frying pan over a medium heat. Add the sausage chunks and fry for 5-6 minutes until brown all over. Add the fresh chilli and fry for another minute, then add the pulsed greens.
  • Add the cooked pasta, butter, ½ of the Parmesan and some pasta cooking water. Move and shake the pan to emulsify the sauce, you’re looking for a glossy finish. Check the seasoning and season to taste with salt and pepper.

Plate up

  • Plate up the Spicy Green Sausage Pasta with the remaining Parmesan and lemon zest. Enjoy!
