Super Quick Ramen with Chicken & Vegetables

Ramen is a fragrant Japanese noodle broth. Our speedy version provides a delicious comforting dinner. The deep savoury flavour of miso, soybean paste, is perfectly balanced with the sweetness of the mirin.

Ingredients

  • chicken breast 650 g (sliced)
  • miso paste 2 tbsp
  • sesame oil 1 tbsp
  • chicken stock cube 2
  • garlic cloves 2 (crushed)
  • ginger 10 g (grated)
  • soy sauce 2 tbsp
  • dried noodles 250 g
  • stir fry vegetables 300 g
  • spring onions 2 (sliced)
  • fresh coriander 1 handful (chopped)

Method

  • Crush the garlic cloves. Peel and grate the ginger. Use the back of a spoon to easily peel the ginger. Thinly slice the spring onion and roughly chop the coriander leaves and stalks. Thinly slice the chicken.
  • Heat the sesame oil in a large saucepan on a medium heat. Tip the chicken into the pan and cook until golden brown, around 5 minutes.
  • Add the garlic and ginger and cook for 2 minutes. Stir in the soy sauce.
  • Make up the chicken stock cube(s) according to the packet instructions, with 250ml boiling water per serving. Pour into the pan with the miso paste and bring to the boil. Add the dried noodles and reduce the heat to simmer gently for 5 minutes.
  • Add the pack of stir-fry vegetables and cook for 3 minutes. Taste and adjust the seasoning to your liking. You may like to add a touch more soy sauce or a pinch of sugar or honey to sweeten.
  • Ladle the ramen into serving bowls and garnish with the sliced spring onions and freshly chopped coriander. Enjoy!
