Zingy Noodle Salad

This is a great alternative noodle salad to try. Rice noodles combined with greens, a simple but flavourful dressing and topped with fresh mint and peanuts. See what can be used up in your fridge and make this delicious salad your own!

Ingredients

  • rice noodles 300 g
  • frozen peas 100 g
  • green beans 100 g (chopped)
  • soy sauce 3 tbsp
  • sesame oil 3 tbsp
  • vinegar 1 tbsp
  • sugar 1 tbsp
  • fresh mint 1 handful
  • roasted peanuts 50 g

Method

Cook the noodles

  • Cook the rice noodles according to the packet instructions. Drain and rinse with cold water once cooked to prevent them from sticking.

Cook the vegetables

  • Chop green beans into bite-size pieces.
  • Bring a pan of salted water to the boil. Blanch the green beans and the peas in the water until just tender, around 1-2 minutes. Drain and set aside.

Make the dressing

  • To make the dressing, in a small bowl combine the soy sauce, sesame oil, vinegar and sugar.

Plate up

  • In a large bowl, combine the rice noodles, the dressing, fresh mint and peanuts. Plate Up and enjoy!
