Speedy Satay Sauce Noodles

This easy peanut butter based noodle dish is absolutely rammed full flavour and ready in just 15 minutes. Perfect for an easy family dinner. It's a nourishing meal packed full of vegetables too - win win!

Ingredients

  • broccoli 2 (chopped)
  • garlic cloves 2 (sliced)
  • ginger 15 g (sliced)
  • red onion 2 (sliced)
  • bell pepper 1 (sliced)
  • carrot 1 (sliced)
  • lime 1 (juice)
  • fresh coriander 1 handful (chopped)
  • smooth peanut butter 60 g
  • tamari 4 tbsp
  • sesame oil 2 tsp
  • rice noodles 400 g

Method

  • First finely slice all of your vegetables. Chop the broccoli into small florets. You can chop the stalks too. Peel the garlic and ginger and thinly slice. Thinly slice the red onion and bell pepper. Juice the lime. Chop the coriander.
  • Heat a pan with a splash of sesame oil. Add the red onion, garlic, ginger, carrot, bell pepper and broccoli and fry for around 5 minutes, until softened.
  • Meanwhile, cook your rice noodles according to the packet instructions.
  • Make the satay sauce: In a small mixing bowl add the peanut butter, tamari, sesame oil, half the lime juice and a dash of water. Mix well to combine and season to taste.
  • Drain your noodles and add them to the pan with the vegetables.
  • Add the satay sauce to the pan along with the rest of the lime juice. Sprinkle in the chopped coriander. Stir together. Serve up and enjoy!
