Speedy Chicken Tikka Fajitas

When you need a chicken tikka fix but don't want to spend ages in the kitchen. Enter our sizzling Chicken Tikka Fajitas. Armed with a jar of tikka paste you can make a very delicious dinner in 30 minutes. These are loaded up with bell pepper, red onion and served in soft tortilla wraps, finished with a cucumber raita. Easily adaptable - you could swap the chicken for fish, tofu or halloumi. Make a big batch of the cucumber raita and you can use up any leftovers as a quick side to serve with salad for lunch. Ingredients

  • chicken breast 4 (sliced)
  • red onion 1 (sliced)
  • bell pepper 2 (sliced)
  • tikka masala paste 80 g
  • cucumber ½ (chopped)
  • natural yoghurt 100 g
  • ground cumin 2 tsp
  • spinach 1 handful
  • plain tortilla wraps 8

Method

Prep the ingredients

  • Thinly slice the chicken. Peel and thinly slice the red onion, deseed and thinly slice the bell pepper.

Cook the chicken & veg

  • Heat a dash of oil in a frying pan on a medium-high heat. Add the red onion, bell pepper and chicken to the pan, then add the tikka paste and mix well to ensure it's all coated. If you prefer you can mix this in a bowl before you add to the pan, or do in the pan directly to save on washing up!
  • Cook the chicken and veg for 12 - 15 minutes until cooked through. Check the seasoning and adjust to taste, for example you may want to add some chilli flakes if you like a little extra heat.

Make the cucumber raita & chop the spinach

  • Meanwhile, when the chicken is cooking, make the cucumber raita. Chop the cucumber into small dice, sprinkle with a pinch of salt (this helps to draw out the water). Set aside for a few minutes, then drain.
  • In a bowl, mix together the cucumber, yoghurt and cumin, then season to taste.
  • Chop the spinach. Stir the spinach through the chicken tikka fajita mix.

Heat the tortillas & Plate Up

  • Heat the tortillas according to the back of pack instructions.
  • Build your fajitas however you like them. We start with the chicken and veg mix, then a dollop of the raita.
