Slow Cooker Sweet & Sour Chicken Thighs

This Slow Cooker Sweet & Sour Chicken Thighs recipe is perfect for a hassle-free dinner. The chicken is coated in a tangy, sweet sauce. Using a slow cooker makes it a very hands off process. Here we're serving it with noodles, but you can also serve with rice, couscous or flatbreads.

Ingredients

  • cornflour 2 tbsp
  • bone in chicken thighs 1 kg
  • ketchup 70 g
  • honey 70 g
  • soy sauce 25 g
  • cider vinegar 70 g
  • ginger & garlic paste 2 tbsp
  • dried noodles 250 g
  • sesame seeds to serve

Method

Prep the chicken

  • Use the cornflour to coat the chicken thighs, then season them with salt and pepper.
  • Heat a dash of oil in a large frying pan over a medium heat.
  • Brown the chicken thighs for 3-4 minutes on each side.

Make the sauce

  • In a small bowl combine the ketchup, honey, soy sauce, cider vinegar, ginger and garlic paste.

Cook the chicken

  • Place the chicken thighs in the slow cooker, pour the sauce over to coat the chicken. Cook on low for 4-6 hours.

Plate Up

  • When the chicken is nearly ready, cook the noodles according to the packet instructions.
  • Serve the chicken thighs with the noodles and a sprinkling of sesame seeds. Enjoy!
