Slow Cooker Satay Chicken Noodles

The slow cooker can be your best friend when it comes to making dinner for the family. We all need such busy lives so a recipe like my satay chicken noodles can be a lifesaver! With very minimal preparation, all the ingredients are thrown into the slow cooker pot and let that gentle heat create the magic. A delicious and tasty meal that the whole family will love.

Ingredients

  • onion 1 (diced)
  • chicken thighs 400 g
  • ginger & garlic paste 1 ½ tsp
  • satay sauce 2 tbsp
  • soy sauce 2 tbsp
  • rice vinegar 50 ml
  • straight to wok noodles 300 g
  • fresh chives to serve
  • sesame seeds to serve
  • crispy chilli oil 2 tbsp

Method

Prep the ingredients

  • Peel and dice the onion.

Add all the ingredients to the slow cooker

  • Place the chicken thighs, onion, satay sauce, soy sauce, ginger and garlic paste and rice wine vinegar into your slow cooker, stir to combine.
  • Cook for 4 hours on the high setting or 8 hours on the low setting.

Finish the dish & Plate Up

  • Cook the noodles according to the packet instructions.
  • Remove the cooked chicken from the pot and shred it. Chop the chives.
  • Plate Up the satay chicken with the noodles, sprinkled with the chives, sesame seeds and chilli oil.
