Slow Cooker Chickpea Curry

This chickpea curry is going to be one of the easiest curries you will make. With minimal prep and ingredients required, this one is sure to become a household favourite! This is perfect for popping in the slow cooker then forget about it until you are ready to eat.

Ingredients

  • onion 1 (diced)
  • garlic cloves 4 (diced)
  • curry powder 2 tbsp
  • coconut milk 1
  • chopped tomatoes 1
  • chickpeas 800 g (drained)
  • basmati rice 240 g

Method

  • Dice the onion and garlic.
  • Add the chopped onion and garlic to the slow cooker, with the coconut milk, chopped tomatoes, chickpeas and curry powder.
  • Stir well, then cook on high for 3.5 hours, or on low for 7 hours.
  • Just before the cooking time is finished, cook the rice according to the packet instructions.
  • Plate up the curry with the rice and enjoy!
