Sheet Pan Chicken Tikka Kebabs

Our Chicken Tikka Sheet Pan Kebabs are a clever twist on the viral sheet pan kebab trend. Made with spiced chicken mince and roasted on a tray for ultimate ease, they’re juicy, flavour-packed, and fuss-free. Served with a creamy, mint Greek yoghurt dressing, and vibrant salad, all wrapped up in your favourite flatbreads or wraps, this speedy dinner brings all the taste with none of the stress. We're using chicken mince for a lighter option, these are also excellent using beef, pork or lamb mince depending on what you prefer. You could also serve this with rice or chips, it's up to you!

Ingredients

  • onion 1 (grated)
  • fresh coriander 1 handful (chopped)
  • chicken mince 500 g
  • tikka masala paste 3 tbsp
  • red onion 1 (sliced)
  • tomatoes 300 g (chopped)
  • cucumber ½ (chopped)
  • dried mint 1 tsp
  • Greek yoghurt 200 g
  • flatbreads 4

Method

Cook the chicken kebabs

  • Preheat the grill to high.
  • Grate the onion, discarding the liquid. Chop the fresh coriander.
  • In a bowl mix together the onion, chicken mince, tikka masala paste, most of the fresh coriander and salt and pepper. Combine it really well together (you may find it easier to use your hands).
  • Line a baking sheet with baking paper. Spread the chicken on the baking sheet in an even layer, then cut into 6 long kebabs. Lightly score along each kebab. (we used a 30cm baking sheet).
  • Cook under the grill for 8 - 10 minutes (check after 7 minutes). Transfer from the grill and when cool enough to handle, your kebabs are ready!

Make the salad & dressing

  • Thinly slice the red onion and chop the tomatoes. Deseed and chop the cucumber
  • Add the red onion, tomatoes and cucumber to a bowl, mix well and season with salt and pepper. You can also add some coriander to this if you like.
  • For the dressing, mix the reserved fresh coriander, dried mint and Greek yoghurt together and season to taste.

Plate Up

  • Heat the flatbreads or wraps according to the packet instructions.
  • Layer up your flatbreads with the chicken kebabs and salad, then a generous drizzle of the dressing. Tuck in and enjoy!
