Veggie Sausage Pesto Gnocchi

This gluten free and vegan gnocchi dish is super tasty. It's easy to make and uses only 5 ingredients. Minimal fuss with tonnes of flavour!

Ingredients

  • meat free sausages 340 g (sliced)
  • free from green pesto 4 tbsp
  • broccoli 1 (chopped)
  • gluten free gnocchi 500 g
  • frozen peas 200 g
  • olive oil dash

Method

  • Cut the sausages into slices. Chop the broccoli into small florets.
  • Heat a non stick pan with a splash of olive oil on a medium heat and add in the sliced sausages, broccoli, peas and cook until the sausage slices start to turn brown.
  • Meanwhile, in a heatproof bowl pour boiling water over the gnocchi. Leave to stand until the gnocchi rises to the top. Drain the gnocchi and keep back a few tablespoons of the water you soaked it in for the sauce.
  • Add the gnocchi and pesto to the pan with the vegetables. Stir well and add the reserved water from the gnocchi. Continue to cook for 2 - 3 more minutes until the sausages are cooked through.
  • Plate up and enjoy!
