Speedy Sausage Pappardelle

This speedy meal is all about balancing the flavours. Make sure to taste the sauce and balance with a dash of my favourite cider vinegar. I love to make this at home, kids love it and it's a great speedy dinner for an easy win plus helps to use up any stray sausages! Dinner on the table in 20 - let's go!

Ingredients

  • pappardelle 300 g
  • garlic cloves 4 (chopped)
  • pork sausages 400 g
  • fresh rosemary 3 sprig
  • chopped tomatoes 400 g
  • cider vinegar 10 ml
  • grated Parmesan 40 g

Method

  • Chuck your pappardelle into a pan of salted boiling water, you have 8 minutes! Let's cook!
  • Chop the garlic cloves.
  • Squeeze your sausages into a pan and fry in oil over a high heat, breaking them up with the back of a spoon as they go into little nuggets, so they go nice and crispy, after about 5 minutes chuck in the garlic and fresh rosemary and carry on frying.
  • After 1-2 minutes, you can now add the chopped tomatoes, and rapidly boil to create a quick sauce.
  • Taste the sauce, season with salt and a little splash of cider vinegar to help balance everything out.
  • The pappardelle should be done by now, drain it (keep some pasta cooking water) then add it to the sauce and give a good mix. Use a little pasta cooking water to thin out the sauce if needs be.
  • Load up the plates, top with grated parmesan and enjoy!
