One Pot Sausage Nuggets Pizza Beans

Golden sausage nuggets meet pizza-style beans, for the ultimate crowd pleaser. We’re transforming a pack of Finnebrogue Naked Pork Sausages into juicy, flavour-packed nuggets, then stir them through a rich tomato and butter bean mix that’s full of plant protein and fibre. Swap in your favourite beans if you like - you could swap the butter beans for cannellini, red kidney beans, or chickpeas would work well too. Finished with creamy mozzarella and fresh basil for a naturally gluten-free, hearty meal that’s simple, satisfying, and impossible not to love.

Ingredients

  • Finnebrogue pork sausages 6
  • butter beans 400 g
  • onion 1 (diced)
  • tomato purée 2 tbsp
  • Italian seasoning 1 tbsp
  • garlic granules 2 tsp
  • chopped tomatoes 800 g
  • frozen sliced peppers 100 g
  • mozzarella cheese ball 125 g (torn)
  • fresh basil 1 handful (leaves picked)

Method

Cook the sausage nuggets

  • Heat a dash of oil in a large ovenproof frying pan over a medium heat, when hot, squeeze the sausages into little nuggets into the pan. The easiest way to do this is to pinch off little nuggets directly into the pan with clean hands (you can lightly roll them if you like).
  • Cook for 7 - 8 minutes, until golden brown, transfer the sausage nuggets from the pan, leave all the delicious cooking juices in the pan for cooking the pizza beans.

Make the pizza beans

  • Dice the onion.
  • Add another dash of oil to the sausage pan (if needed, there might be enough fat left in the pan from cooking the sausages), then add the onion and cook for 5 minutes over a medium heat.
  • Stir in the tomato purée and cook for 3 - 4 minutes, until it starts to caramelise and turn a darker red (this adds extra flavour).
  • Stir in the Italian seasoning, garlic granules, chopped tomatoes, the butter beans (including the liquid from the tin), and the frozen sliced peppers. Season with salt and pepper.
  • Simmer gently for 8 minutes, adjust the seasoning to taste.
  • Preheat the grill to high.

Finish the dish & Plate Up

  • Stir most of the sausage nuggets into the pizza beans, keeping a handful back.
  • Scatter over the torn mozzarella and reserved sausage nuggets, with another sprinkle of Italian seasoning. Pop under the grill for 5 - 7 minutes to melt the cheese.
  • Finish with the fresh basil leaves then plate up and enjoy.
